Tête Pressée

Chef Pieter Lonneville's well-known Bruges restaurant Tête Pressée became vacant because chef Pieter started up other professional challenges. Thanks to its unique concept (open kitchen) and location (near the university), this became a great opportunity for demo lessons, workshops with (international) chefs and the home base for the final-year Culinary Arts students to open their unique graduation concept (different formula every week) to the general public every year at the end of November/December. An experience!

24 — 27 Nov

Tondo

A hidden fine dining spot where North Sea fish take centre stage, dry-aged and paired with Japanese precision. Minimalist plates, honest Belgian ingredients and a calm, all-black team letting the product speak for itself.

1 — 4 Dec

Kora

A playful, plant-forward tasting journey where vegetables lead and proteins simply support, revealed course by course. Global flavours meet zero-waste creativity in a warm, artistic setting inspired by the team's diverse roots.

8 — 11 Dec

Kumera

An intimate seed-to-flower tasting menu that turns overlooked plant parts — roots, stems, seeds — into refined, story-driven dishes. Candlelit, warm and unpretentious: fine dining without the stiffness.

15 — 18 Dec

Linea 23.5°N

A set-menu journey tracing the Tropic of Cancer, one course at a time — Mexico, the Bahamas, Algeria, Egypt, India and China each lend their ingredients and spice. Earthy tones, warm light, and a team who guide you from destination to destination.

5 — 8 Jan

Amari

A convivial sharing concept built around connection, with local, seasonal dishes placed in the middle of the table. Simple plates and honest ingredients come first; the handmade ceramics and selected teas are for sale too.

12 — 15 Jan

Noisette

A mysterious fine dining experience on the edge of Lyon, where fire, wood and hazelnut give classic French cooking a modern turn. Instead of a menu card you get a table lamp listing the ingredients; the story unfolds course by course.
